Baseline: The Rise of West African Food in Naarm with Mary Akindele

From jollof rice to fufu to suya – West African food is on the rise in Naarm, and it's here to stay. Nana is joined in the studio by British-Nigerian owner and operator of Mary's and Sam's Cafe, Mary Akindele, to break down this rise.

They discuss why West African food isn’t a niche, how Mary makes traditional Nigerian recipes her own, food as a centrepiece for community and culture, and the richness and beauty of West African food and hospitality.

"I am hugely inspired by my mother, father, aunts, uncles...all the foods that I've eaten in Nigeria. But it's not going to be a direct copy and paste, I have my own story behind me."

Sam's Cafe is located at 158 Barkly Street, St Kilda. Mary's is located at 68/70 Johnston Street, Collingwood. Keep up with Mary here
