As well as detailing his origins jetting from an earthquake-ruined Christchurch to work on the Gold Coast and eventually Melbourne, head chef Tim Stapleforth discusses his love for cooking with binchō-tan (or, Japanese white charcoal), the preciseness of Japanese cooking and the contemporary move away from wasteful ‘clean’ cooking to blasting everything over a fire pit. Oh, did we mention that Tim’s such a solid guy that he actually cooks mushrooms for us over a steaming hot yakitori grill?
