Diet Schmiet! (Bahn Mi Is Mine)

Bahn Mi is Mine ( Vietnamese Pork Roll )
(pronounced "Bun-my")
Serves 4
Instead of the luncheon meat I have used pork meatballs

STUFF:
Meatballs
500g ground pork
¼ cup finely chopped basil (or purple basil)
1/8 cup (around 1 tablespoon) chopped mint
3 spring onions, finely chopped
1 tablespoon fish sauce
1 tablespoon chili sauce ( I use Sriracha chili sauce)
1 tablespoon grated palm sugar
2 teaspoons cornflour
1 teaspoon ground white pepper
1 teaspoon sea salt
1 tablespoon rice bran oil for frying
ACTION:
Mix all ingredients except for rice bran oil together in a larg bowl till well combined. Wet your hand with a little water and roll the pork mixture in to approx. 2cm balls. Heat oil in large heavy based frypan and fry the pork balls in batches, moving around till browned. Add extra oil if needed. The pork mix can be made a day ahead (cover and refrigerate)
Hot Chili Mayonnaise -
2/3 cup of good quality mayonnaise
2 spring onions finely chopped
1 dessertspoon chili sauce (I use Sriracha chili sauce)
Mix ingredients together. Mayonnaise can be made a day ahead (cover and refrigerate).
Pickled Vegetables -
2 cups grated carrot
2 cups daikon radish
(you can substitute with normal radish, just cut it back to 1 cup)
¼ cup rice vinegar
¼ cup sugar
Mix all ingredients together in a bowl an hour before serving, occasionally stir the vegetables.
To Serve:
4 Baguettes
Lettuce
Fresh sprigs of coriander
Cut open the baguettes
(you can warm them in an oven for a few minutes if you like).
Spread with the chili mayonnaise.
Add a piece of lettuce and coriander sprig.
Add the meatballs, Serve immediately
