Diet Schmiet! It Don't Mean A Thing If It Ain't Got That Zing (Chipotle Chicken)

Chipotle Chicken
(Inspired by a recipe created by Paul Grimes in Gourmet magazine.)

Preheat oven to 230°C
STUFF:
¼ cup olive oil
1 dessertspoon butter
4 cloves of garlic, thinly sliced
1 red onion, chopped
½ cup ketchup (tomato sauce)
1 tablespoon Dijon mustard
1 tablespoon brown sugar
1 chipotle chile, chopped with 1 tablespoon of adobo sauce
1½ tablespoon Worcestershire sauce
1 tablespoon apple cider vinegar
¼ teaspoon powdered cinnamon
1 free range chicken, cut into 8 pieces
ACTION:
In a large heavy based frypan over medium high melt butter and heat the oil.
Cook garlic, stirring constantly, until golden, remove with a slotted spoon to a plate.
Turn the heat down slightly and add the onion, stir occasionally until golden.
Add garlic and the rest of the ingredients except the chicken.
Cook for about 5 to 10 minutes or until the sauce thickens slightly.
Coat the chicken in the sauce reserving half of the sauce to brush on later.
Place the chicken skin side up in a baking dish in a preheated 230°C oven.
Cook for 25 minutes.
Remove from oven and brush on the rest of the sauce.
Return to oven and cook for another 20-25 minutes.
