Diet Schmiet! (Two Way Schnitz with Don't Make Me Blue Dressing

Schnitz 

Schnitzel =

3 free range breast fillets
3 tablespoons of flour, in shallow bowl
2 eggs, lightly whisked in shallow bowl
4 tablespoons of Panko Breadcrumbs (or enough to coat the schnitz)in shallow bowl
1 tablespoon of butter and a splash of vegetable or canola oil for frying.


Place the fillets one at a time in cling wrap and flatten with a rolling pin till fairly thin.
Dip in the flour to coat, shake off excess.
Then dip in the egg and finally dip in the breadcrumbs.

Heat large frypan and fry the schnitzels one at a time till golden brown.

You may need to add extra butter in between frying the schnitzels.

Serve chopped in to strips with a salad and blue cheese dressing
(recipe following) OR cut the Schnitzel in half and place in buttered bread with a slice of swiss cheese, good quality mayonaisse mixed with a little dijon mustard and whatever other fillings you desire.

Blue Cheese Dressing=

½ cup sour cream
3 Tablespoons milk
2 Tablespoons apple cider vinegar
1 cup crumbled blue cheese (I used Stilton)

Mix all the ingredients together.

Serve with a salad of iceberg lettuce (or butter lettuce) cherry tomatoes
and persimmons that have been peeled, cored and sliced.
