Diet Schmiet! (Oh My Darlin Lemon Lime, slice)

Oh My Darlin Lemon Lime (slice)

(Makes 15 portions)
22cm X 33cm baking pan lined with baking paper
STUFF:
Crust -
2 ¼ cups plain flour
2/3 cup icing sugar
225g unsalted butter (cut in to small cubes)
2 teaspoons lemon/lime zest
Topping -
1 cup sugar
3 eggs
1/3 cup lemon/lime juice
(I used 2 limes and 1 lemon for the zest and juice)
3 teaspoons lemon/lime zest
Preheat the oven to 180°C
ACTION:
Crust -
Put flour, icing sugar, butter and zest in to a large freestanding mixer with paddle attachment and beat until the mixture resembles breadcrumbs.
Tip in to baking pan and press it evenly in to the base.
Bake for about 20 minutes or until lightly golden.
Remove from oven and allow to cool slightly.
Topping -
In a medium sized bowl whisk together the sugar, eggs, lemon/lime juice and the zest.
Pour over the crust and return to the oven.
Bake for about 20 minutes or until the edges are golden brown and the topping has set.
Let cool completely, cover and refrigerate overnight.
