Diet Schmiet! (Golden Plains Brain Muffins)

Golden Plains Brain Muffins
Makes 9
(You can make the batter the night before and refrigerate. When you're ready to cook them just stir in the berries and coconut)

STUFF:
115g unsalted butter, cut in to small cubes
¾ cup organic caster sugar
Zest of one lime
2 large free range eggs
75ml (5 tablespoons) cream
1 cup plain flour
½ cup shredded coconut
½ cup fresh or frozen raspberries (you can substitute blueberries if you like)
Preheat oven to 180°C
ACTION:
Spray a little cooking spray on the non stick muffin pan just so they come out easily.
In the bowl of an electric mixer beat butter, sugar and the lime zest till light and creamy.
Add the eggs one at a time.
Reduce mixer to low and add the cream.
Add in the flour till just combined.
Stir in the coconut then gently add the berries.
Spoon the mixture in to the muffin tin.
Bake for 25 minutes until the edges are a golden colour.
Wait a couple of minutes then remove from the pan and allow to cool on a wire rack.
Serve warm with organic butter.
