French Toast Casserole with Brown Sugar Topping

1 loaf of crusty dense white bread
Cream cheese to spread on bread
8 large free range eggs
3 ½ cups full cream milk
¼ cup brown sugar
1 teaspoon vanilla bean paste or vanilla extract
1 teaspoon ground cinnamon
Pinch of sea salt
Maple syrup to serve
Topping-
½ cup brown sugar
1/3 cup plain flour
½ teaspoon ground cinnamon
Pinch of sea salt
4 tablespoons of butter (around 60 grams) cut in to small cubes
Grease a large casserole dish or baking pan
Slice bread in to roughly 3cm (1 inch) slices.
Spread some cream cheese on each slice of bread.
Arrange slices in the baking pan then arrange a second layer overlapping the first.
In a large bowl whisk together the egg, milk, sugar, vanilla, cinnamon and salt.
Pour milk mixure over the bread.
Press the bread lightly to make sure the milk soaks in to the bread.
Cover with plastic wrap and place in refrigerator overnight.
Preheat oven to 180°C (350°F)
In a bowl combine the sugar, flour, cinnamon and salt.
Rub in the butter.
It doesn’t have to be too rubbed in too well.
Sprinkle over the soaked bread and bake for about 35 minutes or until topping is brown.
Serve with maple syrup.
