Heavenly Pasta

Flip’s Heavenly Pasta sauce with caramelised onions, goat’s cheese, preserved lemon, walnuts and sage....



STUFF:
4-6 onions
Olive oil
Salt and pepper
Fresh sage chopped – intense flavour so add with caution!
1 preserved lemon, chopped
150 grams goats cheese
Ѕ cup chopped walnuts
roquette



ACTION:
Peel onions, then slice into rings. Place in heavy based saucepan with olive oil and salt and pepper and cook very slowly for 2 hours, stirring often.

The longer you cook the onions the sweeter they become.

Stir in preversed lemon and sage and cook for ten minutes.

Add goats cheese and walnuts and cook over a low heat until cheese has melted.

Stir through a handful of roquette.

Serve on toast or pasta.
