Breakfast Burrito/Mango Upside-Down Cake

Breakfast Burrito - Serves 4

STUFF:
6 eggs
2/3 cup cream
salt and pepper
4 Burritos
grated tasty cheese
salsa or bacon or fried onion and fresh chilli


ACTION:
If putting bacon or onion and chilli fry in a little butter in a heavy based pan then add the scrambled egg mixture (eggs, cream, salt and pepper whisked together).

Cook scrambled eggs (move mixture around pan from the edge to the middle around every 30 seconds so it doesn't set in a large mass). Take them off the heat while they are still a little runny (not too dry) as they keep on cooking.

Place a tablespoon or so of the scrambled egg mixture with some tasty cheeese in the middle of the burrito and fold up into a parcel.
Put in sandwich toaster for a few minutes or until golden.

Serve with salsa if you like, otherwise they are tasty on their own.

Mango Upside-Down Cake - Serves 8

STUFF:
15g (1 tablespoon) butter melted
1/4 cup firmly packed brown sugar
1 1/2 cups mango, thinly sliced (around 2 large)
1 cup plain flour (all -purpose flour)
3/4 teaspoon baking powder (baking soda)
small pinch of salt
50g (1/4 cup) butter
2/3 cup sugar
2 teaspoons grated orange rind
1 teaspoon vanilla extract ( I use the vanilla bean paste)
1 large egg
1/2 cup plain or greek yoghurt
*Pre-heat oven to 180 degrees celcius (350 degrees f)


ACTION:
In a 9-inch springform pan place baking paper in bottom and then coat with the melted butter (15g) then sprinkle the brown sugar over it. Arrange the mango slices in a spokelike pattern over the brown sugar.

Beat sugar with the rest of the butter (50g) on a medium speed in a mixer until well blended. Add orange rind, vanilla and egg. Beat well. Add the flour, baking soda and salt alternating with the yoghurt, beginning and ending with the flour. Beat well till combined then pour over the mango sliced.

Bake for 30 minutes or until a wooden skever insterted in the middle comes out clean.
Let cake cool in pan for around 5 minutes, loosen cake from side of pan before opening the cake tin. Invert onto a cake plate.
