Free Range Frittata

Flip’s "Free Range" Frittata
STUFF:
6 free range eggs
40 grams parmesan cheese, grated
125 grams small mozzarella balls (or another gooey cheese)
100 grams cheddar, roughly broken up (or another bitey
cheese)
2 cups chopped parsley and basil and coriander
Handful rocket
1 cup cooked mini penne
Salt and pepper to taste
Chilli - optional
* other gorgeous cheeses are provolone and fontina but this
requires a trip to a specialist cheese shop or deli
ACTION:
Beat eggs.
Add cheeses, herbs, rocket and pasta. Stir.
Season to taste.
Spray 25 cm shallow fry pan with oil.
Transfer egg mixture to saucepan and cook on medium-low for 15
mins. (Do not be tempted to increase the heat)
Place saucepan until a griller and cook for another 5 minutes or
until golden brown.
Serve immediately and eat with salad or allow to cool and serve
as part of an antipasto plate.
